BLOG: Portable Meals, Muffin Tin Style - Guest Post by Kim Hendrickson, Salvia Press

Now that March has passed, my cooking classes have started off with a bang! Chocolate Babka, Beautiful Bundts and a two night class on Muffin Tin Meals. I see this “concept” in many magazine these days and I really like to concept of a portion controlled sized portable meal BUT most of the recipes are very heavy on carbs and while the recipes taste great, these portable meals are not very balanced or  healthy for anyone. So, I made a lot of alterations of the recipes I really like. Below is one of the recipes I’ll be using in these classes.

 

EGG TRAVELLERS

Yield: 12 muffin meals

12 strips of bacon

12 eggs

2 cups shredded sharp cheese

 2 scallions, green part only

Pepper

Cherry tomato halves or broccoli (optional)

Preheat oven to 350F.

Using a large skillet, fry the bacon halfway: the bacon will be flexible, partially cooked and most of the fat rendered.

Cut each toast into two rounds, to fit the bottom of each muffin tin. Place a strip of bacon around the sides of the muffin tin. Sprinkle a tablespoon of shredded cheese over the toast round, then crack 1 egg into each tin. Sprinkle the remaining cheese equally over each egg. Top each egg with pepper, scallions, cherry tomatoes and/or broccoli pieces.

Bake for 18-20 minutes until the egg is firm (whites and yellow) and the bacon is crisper. Serve immediately or reheat later or eat at room temperature.
