BLOG: Tea and Astringency - Guest Post by Linda Villano, SerendipiTea

We in the tea world use the term astringency on a fairly regular basis & it is often accompanied in the same sentence or phrase by the word tannins. But what is it really all about? . . .

Sometimes, it’s best to present a piece of perfectly delivered information as is.  Such is the case with the article, Sandpaper & Tea: The Science of Astringency by Daniel Bojar.

Although written with a cocktail creation focus, the content is directly applicable to tea.
