INTRODUCING LAVENDER AND CINNAMON ~ Two exceptional flavored blends by Palais des Thés

March 2014Created in Paris in 1986, renowned French tea brand Palais des Thés offers all-natural signature Flavored Teas (“Les Créations”), pure Single Estate Teas, and exceptional, limited edition “Grand Crus”. This spring, the brand introduces Pure Indulgence Lavender and Pure Indulgence Cinnamon, two new exquisite Créations blends, joining the Pure Indulgence Collection.

Applying Palais des Thés‘ expertise and high standards, the Pure Indulgence Collection is the result of a long selection process and development, motivated by the quest to find the perfect balance between high quality classic teas and a single, all-natural flavor (fruit, flower or aromatic plant-based), for a captivating experience that will awaken all your senses.

Pure Indulgence Lavender is a magnificent blend featuring an Oolong teafrom China and the finest lavender flowers. In this harmonious pairing, the uplifting scent of lavender enhances the vegetal notes of the tea.

Oolong teas, also called semi-oxidized teas, are a specialty of China and Taiwan. There are numerous blends of Oolongs, depending on the growing region, tea plant variety, and manufacturing process.

Pure Indulgence Cinnamon is a deliciously subtle pairing that combines a sumptuous Chinese Pu Erh with natural cinnamon essence, for an outstanding blend.

Pu Erh, also called dark or fermented tea in reference to the deep brown infusion it produces, increases its quality with age. This tea is produced in the Yunnan province of China and is highly regarded in traditional Chinese medicine for its curative properties. It is said to lower cholesterol levels, aid in digestion, and improve blood circulation, among many health benefits.

Behind the Scenes at Palais des Thés’ Creative Studio:

Creating Innovative Blends with François-Xavier Delmas and Mathias Minet

What was the inspiration behind the Pure Indulgence Collection?

We had the idea of working on classic scented teas. We wanted to rid them of the old clichés often conveyed by supermarket tea brands, and recreate them as our own exceptional flavored blends. Does lemon tea really have to be insipid and only aimed at people who don’t like traditional tea? Absolutely not!

Can you tell us a bit more about the creative process?

In the beginning, it was a bit like a game. We started with the lemon blend, working from a blank canvas. Without constraints on the type of tea, raw materials or the cost of goods, each member of the creative team developed their own idea. The sole assignment was to reinvent lemon tea. We really enjoyed the process, and the selected recipe has been an incredible success. Everyone who tasted it loved it immediately. Following this first attempt, we came up with the idea of creating an entire collection: each tea centered around a single ingredient.

Will the collection expand?

Yes! Every year, Palais des Thés will release new Pure Indulgence blends. In 2014, two unusual teas are already in the spotlight: Lavender is based on a gorgeous floral-vegetal Oolong combined with the finest quality of lavender. Cinnamon subtly balances between earthy Pu Erh and comforting cinnamon. In both cases, the creative process lasted for more than a year and included many rounds of tastings. The creative team is now working on two more flavors for next year – but for now, they’re still top-secret!

François-Xavier Delmas is the founder of Palais des Thés, Mathias Minet is co-director of the brand and leads the creation of signature blends.
