CHRISTOPHER COCCAGNA - DECEMBER, 2013

Bay Area-based tea sommelier, Christopher Coccagna, has partnered with the California Milk Processor Board (CMPB), the creator of GOT MILK?, to provide beverage enthusiasts with innovative takes on teas with milk. From cambrics to cocktails and everything in between, Coccagna’s tea drinks are perfect for the cooler months and for entertaining this holiday season.

GAIL GASTELU/THE TEA HOUSE TIMES:  Hi Christopher, thanks for taking time for an interview. First things first, we want to know more about you. How did you become interested in tea?

CHRISTOPHER COCCAGNA:  Tea has always held a special place in my life.  From a nightly cup of fresh peppermint tisane with my mother during childhood, to a two year journey through New Zealand, Australia, and Asia, tea has always brought incredible people in my life together.  It means community for me and I have always kept that principle close to my heart with all things tea.

GAIL: Please provide a brief overview of your own business. (Business name, what it is, link to your website, etc.)

CHRISTOPHER: I founded T-WE TEA in 2010 with three guiding principles: truth, beauty, community.  We are a San Francisco based hand blender of all natural teas with no flavor extracts and have a retail store in downtown SF and handmade market presence across the US.

GAIL: Tell us about the Got Milk? milk and tea winter campaign and how you became involved.

CHRISTOPHER:  I've always sought new opportunities to highlight tea in creative ways and the partnership with GOT MILK? has been a really great outlet for that creativity.   I am really fortunate they found me through my personal tea professional website.

GAIL:  We will be sharing some of the recipes in our JanFeb2014 issue and at TheTeaHouseTimes.com website – but tell us about your favorite recipe featured in the Got Milk? campaign.

CHRISTOPHER:  I have two favorites for different occasions: the White Russian Caravan cocktail and the Lavender London Fog Latte.  The Smokiness of the White Russian Caravan really comes through making it the perfect drink to start a fun night with friends.  I love London Fog Lattes and to create your own lavender-vanilla simple syrup to sweeten the latte sends me to heaven.

GAIL:  Was it hard to come up with such an interesting variety of milk and tea recipes? What inspired you?

CHRISTOPHER:  Tea and milk have gone together for hundreds of years, so to bring the two traditions together in an approachable modern twist was a fun undertaking. I wanted to combine high quality, easily accessible teas with the creamy goodness of milk.  Starting with three categories of lattes, cambrics, and cocktails, I then tried to find ways to put a tea spin on traditional milk drinks.  My inspiration started with the moment, whether it be a party with friends or a shared moment drinking tea together before bedtime, and then I worked to capture the comfort that milk gives and the fresh flavors of teas.
