This month we are interviewing: 


Botanical Bakery was founded in 2008 by Sondra Wells.  Botanical Bakery offers crisp, buttery, tea cookies in alluring aromas of the world’s finest herbs and spices.  The cookies are made from organic ingredients to delight and soothe your soul.  Delicately sweet, they pair beautifully with tea, coffee, cheese and wine.


GAIL/THE TEA HOUSE TIMES:  I hear they call you the Planter, Baker and Tea Cookie Maker.  How did Botanical Bakery begin?


SONDRA WELLS/BOTANICAL BAKERY:  I am not a baker by trade, just a foodie with an entrepreneurial spirit. I have a passion for entertaining, and crave that intimate moment when you watch someone taste something extraordinary for the first time.  I love to throw elaborate dinner parties. About 10 years ago I threw a party where I first baked the Lavender Tea Cookies. People loved them. So I'd bring them out every now and then, playing around with different herbs and spices to suit the evening’s mood. The gourmet tea cookies were always a great success. 


GAIL/THE TEA HOUSE TIMES:  What varieties are available?


SONDRA WELLS/BOTANICAL BAKERY:  Six flavors are currently in the offering; Lavender, Cardamom, Cinnamon Basil, Lemon Thyme, Ginger Ginger, and Fennel Pollen. New for the holiday season is Peppermint TCHO™ Cacao Nibs.


GAIL/THE TEA HOUSE TIMES:  Tell us about the ingredients.


SONDRA WELLS/BOTANICAL BAKERY:  Our gourmet tea cookies are simple. They have but three basic ingredients: flour, butter and sugar. It is our belief that great tea cookies start with great ingredients.  That is why we handcraft our tea cookies with all natural organic ingredients. Our flour is unbleached and made from a premium blend of organic hard red wheat. Our butter is European Style Organic Sweet Cream Butter with over 85% butterfat, made in a 1950's small batch butter churn. Our sugar is organic pure cane sugar.  We carefully select the most aromatic culinary herbs and spices. We use the actual herb or spice, not a tincture or flavoring. The actual leaves, flowers, stems, roots, seeds or pollen are incorporated into our dough using our proprietary method. Look for our all natural line in early 2010.


GAIL/THE TEA HOUSE TIMES:  Do any of the cookies contain tea leaves?


SONDRA WELLS/BOTANICAL BAKERY:  We are asked this quite a lot. Our original concept was to create a delicate cookie that compliments tea. We’ve been approached by quite a few Tea Companies and are in the works with to create cookies for them with their tea under their brand name... more about that in January.

GAIL/THE TEA HOUSE TIMES:  These cookies are crisp, buttery, aromatic, and truly delicious.  Tell us a little more about them.


SONDRA WELLS/BOTANICAL BAKERY:  Our cookies are handmade -- each one hand rolled, hand cut, and hand packaged. Great thought went into your experience. We tried to imagine you enjoying our tea cookies in a quite moment pouring over a great novel, sitting around a table catching up with a good friend, or perhaps even with afternoon tea. We wanted a shape that sits beautifully on a plate or can snuggle up to a cup of tea or coffee on a saucer. They are also a wonderful addition to a cheese course.


We hope our Tea Cookies help call to mind a calm, in-the-moment lifestyle. Our tea cookies compliment tea of course, but we wanted to also invoke the slower, present, not-to-be-rushed moment we are all craving today. One that is reminiscent of the art of making and sitting down to a cup of tea.
