Clotted Cream vs. Double Devon, a side by side comparison of creams sent to us from Christopher Brookes Distinctive Foods.

 

Have you ever wondered what the difference is between Clotted Cream and Double Devon?  Well, The Tea House Times performed a side-by-side taste comparison and can tell you both are delicious, but there are slight differences.  Clotted Cream has a minimum fat content of 55% while Double Devon has a minimum fat content of 48%.  What tastes better?  If you ask Lady Gayle of The Tea House Times, she will tell you both are marvelous since she loves scones with cream and jam; as long as it is real cream and not a distasteful knock-off many establishments serve. 

 

Our tasters preferred the clotted cream slightly better than the Double Devon.  Why?  Well, very well stated, one of our tasters said, “a higher fat content yields a tastier product.”  True, really, think about skim milk vs. 2% or heavy cream.  The higher the fat content, the more taste.  If you want to save a few minor calories, however, the Double Devon is a fine choice as the two products side-by-side have similar taste.

 

Both Clotted Cream and Double Devon are made from cream separated from Devonshire cow’s milk.  Devon is a county in southwest England, famous for the thick creams they produce on their farms and in their dairies.  Clotted cream is made by pouring milk from high-fat bred cows into shallow pans; after settling the cream rises to the top.  An old farm produced method was to slowly heat it over a stick fire or stove for many hours until the cream was scalded, left to cool, and the cream layer skimmed off into a dish.  Nowadays, dairy methods are better controlled and steam heated pans are used.  Perhaps the heating and scalding adds flavor as well.

 

Do you know what Cream Tea is?  Cream Tea refers to enjoying tea along with warm scones topped with strawberry jam and cream.  First you spread the jam onto your scone and then top it off with a dollop of cream.  Clotted cream is the most widely used product for cream teas.  Try C.
